Is it practical/possible to run 3x 12v 385 motors from a single ESC given the correct choice of battery?
I don't need ludicrous speeds or anything but a reasonable endurance would be good. The model will be approx 1m long weighing in at around 7 or 8 kilos and obviously be triple screwed.

Yes = just add the current draw for each motor and make sure the esc can handle the total.

You could just add the maximum current ratings.  The MFA website, and Component Shop, show the current draw at maximum efficiency as 0.99 amps. Double this and you've still only got 6 amps for the 3. A 10 amp ESC should be adequate, but for safety use a 15 amp version.

That's what I would do - should I ever build a model with three motors - two is the maximum I've achieved. lol! lol!

Hi, it's not impossible, but do you really need that ?

If you use 2 ESC for the outer ones, you can get a better steering.  The middel one can be just usead as booster, full speed or nothing.

That's what they ofter do in the Graupner Bermpohl or Berlin.
